Lunchbox 69: Sick Lunch

The boyfriend has been sick for the last two weeks, and is just getting back into regular food. He asked for the plainest plain lunch I could manage, and here it is: plain white bread, jam on the side and a few raisins.

Two notes about this lunch :) First of all, I want to thank Kelly from Easy Lunchboxes for sending me the easy lunchbox dippers. As you can see, they fit perfectly in the medium compartment (up to four of them will fit in the main compartment too) and are perfect for a spoonful of jam. The boy is not always gentle with the lunchbag and has complained before about me packing liquidy things, so I appreciated being able to pop a lid on these.

Also, the white bread. I had no idea how hard it would be to find plain white bread! All the bread these days is fortified and enriched and so on, and all I wanted was plain. It took forever to find some!

I am glad he is on the mend. I hope he remembers to eat his boring lunch tomorrow; he needs to get his energy back!

Peanut butter and nutella sandwich, grapes, salt & vinegar soy nuts. I played with the boy's lunch yesterday and did heart cutouts. He was impressed by my 'carving skills' (I used a cookie cutter; he didn't know!) but lamented the lost bread. So I kept the cut-out in there this time...

A summer favourite: I always have the ingredients on hand and I can cook it quickly in the toaster oven without heating the kitchen up! Pizza bagel, 100-calorie snack pack, red grapes.

At last, I have found a bread that does not irritate my eczema or leave me starving an hour later: german rye bread. So here it is with soy cheese slices and tomato sauce (lower cal than mayo and adds some veggie content) and strawberries with little cookies on the side.

Ordered from a local vegan take-out place and saved some for lunch tomorrow :) fried rice, summer roll, tofu and some frozen baby carrots to round out things.

Lunchbox 60: Indian Freezer Meal

My new apartment has a standalone freezer, which has long been a dream of mine. I dislike cooking and the idea of cooking in a batch and having it for later appeals to me a lot. So, to make use of the freezer (and my surplus of easy lunchbox containers!) here is my first freezer meal: brown rice, canned lentil Dal, frozen broccoli and frozen mango. To serve, just pop out the mango, reheat, pop the mango back in and away you go---protein, grains, veggies and desert. One can of Dal, some Minute rice and a few freezer staples game me four meals.

Lunchbox 59: Snacks for the Road

Heading out of town for the long weekend to visit the boy's family. Snacks for the road include: mini raisins, graham crackers and peanut butter, tea for two, fruit to go bars, rice crackers and grapes. We are staying in a different hotel this time and I'm not sure what options I'll have, so I am trying to be prepared.
